Cheese Exploration In Review ~
Everyone loved the Quebec cheese, and after a small poll we found the favorite pairing was the Le Fin Renaud with our award winning CE Reisling 2007.
Le Fin Renaud is a firm cheese with a distinctive ordour that combines fresh milk, earthiness and a pinch of mushroom. The taste is buttery with a hint of nutiness (hazelnut).
This artisan cheese brought out the Reislings' natural sweetness, changing the green apple notes to softer sweeter fruit, similar to a golden delicious apple. This combination was also very pleasing to the palette in terms of mouth feel. When combined, the wine and cheese created a buttery texture in your mouth, that left you wanting more.
As always we learned about cheese from Greg. How best to wrap it and store in your fridge. The different seasonal qualities of cheese, and the best number of years for a good quality cheddar, without being too strong.
